Vincenzo Emma Joins Grand Park Kodhipparu Maldives as Executive Sous Chef

Grand Park Kodhipparu Maldives, the first luxury resort by the Park Hotel Group – Singapore, appoints Vincenzo Emma as the Executive Sous Chef for at Grand Park Kodhipparu Maldives.

With over a decade of experience in different countries and in specialty of Italian and Mediterranean cuisine, Chef Emma will bring a contemporary set of destination-inspired gastronomic experiences to the five-star luxury resort in North Male Atoll. Vincenzo’s first chef role as head chef is at the renowned Dalla Terra Wine restaurant in London. At the award-winning Lardo, he managed menu development, crafted daily signature dishes, and handled event catering operations.

Vincenzo then worked as the senior sous chef at Capri Court, Shangri-La Hotel & Resort in Muscat, Oman where he worked alongside the 3-time Michelin-starred executive sous chef Marco De Vincentis. Before joining Grand Park Kodhipparu, Maldives, Vincenzo’s was rendered at of the finest restaurants in Ras Al Khaima – Azure, inspired by his passion for Italian cuisine and flavours.

Along with the Executive Chef Raymond Tan, Vincenzo will be navigating the culinary journey across three restaurants, including the award winning Firedoor at Grand Park Kodhipparu. Also known as the restaurant that will also have a waiting list in the Maldives. The exquisite Breeze Bar as well as the uber-popular Edge resonates with exemplary dining experiences in the Maldives. “Chef Vincenzo’s approach to culinary journeys is quite close to my heart, and it gives me great pleasure to welcome him to the team. Set over the water, the fine diner Firedoor is structured eloquently with an open water space in the middle of the floor for a spectacular dining ambience. The Breeze bar and the wine cellar is the perfect setting for sipping champagne as the sun sets, and the restaurant offers fusion food with Asian and Mediterranean leanings. Sitting on a large wooden deck under the cover of palm thatch gazebos, The Edge is a more casual affair, where food offerings alternate between Maldivian, Indian and Eastern. The partly open kitchen means you can watch the chefs as they prepare your meal.

Designed by world-renowned hospitality firm, Hirsch Bedner Associates, the resort is an oasis of luxury and tranquility, featuring thoughtfully designed spaces across the island alongside modern interiors inspired by the elements unique to the Maldives.
